Recipe – Pie with Västerbotten cheese

If you're invited to a dinner party in Sweden around this time of the year, don't be surprised if the guests wear bibs round their necks and comic paper hats on their heads. It's the season of crayfish parties. A classic feature in the crayfish table is this cheese pie, made with a unique, strong Swedish cheese called Västerbottensost.

Pastry

125 g butter

3 dl plain flour

1 tbs water

Filling

3 eggs

2 dl double cream

150 g Västerbottensost cheese

Salt and pepper to season

Mix the ingredients for the pastry. Use the pastry to line a pie dish with a diameter of 24 cm and bake for about 10 minutes in 225°C. Whisk eggs and cream, add cheese. Season with salt and pepper. Pour the cheese mixture into the pastry case and bake for about 20 min until the pie filling is set. Allow to cool. serve the pie as it is, or with sour cream, whitefish roe, chopped red onions and dill.
